Sweet Potato Lasagna

Ingredients:

5-6 small-medium sweet potatoes

1 medium-large onion

1 pkg mushrooms, sliced

1 teaspoon minced garlic

2 stalks celery, diced

1 pkg firm or extra firm tofu, drained

3 stalks broccoli, cut into florets

½-1 cup corn

2 handfuls of spinach or other greens

2 green peppers and one red pepper, diced

2 cans diced tomatoes, drained, or fresh

2 small-medium tomatoes, sliced (if in season)

2 cans (or one large) tomato sauce

Cashews, ground (easy to do this in a coffee grinder)

Salt and pepper to taste

Italian seasoning

No boil lasagna

1.       Bake sweet potatoes on 350 for one hour or until done.

2.       Sauté onions and mushrooms with minced garlic and celery. Add spices.

3.       In a large bowl, blend tofu with vegetables: broccoli, corn, greens, peppers.

4.       Add sautéed ingredients to bowl and mix.

5.       Put a small amount of tomato sauce on bottom of baking pan then top with 4 sheets of lasagna pasta.

6.       Top with ½ of vegie mix. Then top with one can of tomatoes. Next use ½ of cooked sweet potatoes and layer over the tomatoes. Add a good amount of tomato sauce over the sweet potatoes.

7.       Top with another layer of 4 sheets of lasagna pasta followed by additional tomato sauce. Add one layer of slice tomatoes (if available, otherwise omit).

8.       Lastly, top with ground cashews.

9.       Cook covered with aluminum foil on 350 for 50-60 min. Uncover and let the top brown slightly for a few minutes.

*The above amount of vegies makes enough for 2 batches of this. So, make your first batch, then add same ingredients to a second pan and cook the second batch. It may sound like a lot, but this is one of the most amazing dishes I have ever had. My husband and I didn’t get tired of eating this one. This recipe is a bit more time intensive than others, but trust me, it is absolutely worth it. Such a great flavor and wonderful variety of vegetables in the dish. This is one I will definitely make time and time again.
